Yellow tea is produced only in a few areas of China. These include the Hunan and the Sichuan provinces. Because of this, very little yellow tea is produced or exported, making it rare. Similar to green tea, the highest quality grades of yellow tea are produced from early spring harvests. It is known for its delicate and fresh flavors, and is named after its slightly yellow cast. The yellowing process that yellow tea undergoes is what gives its yellow cast.

Yellow tea is plucked, fixed, rolled, and heaped. Heaping, or "men huang" is when the leaves are laid out in piles and rest in wrapped damp cloths. The heat and humidity is what gives thea tea its distinctive yellow cast.
